Amazing Blueberry Muffins With a Vanilla Yogurt Glaze

Today was hectic! I overslept, raced on my bike to get to school on time, spent the entire day in the lab and forgot to eat or drink..then rushed home. Around 7:30 I headed out to the grocery store to grab some ingredients for chili (it is SO cold here at the moment! Feels like winter in Vancouver!), I decided I also needed to whip up a healthy dessert.


Luckily for me, one of my favourite bloggers Taralynn McNitt juuuuust posted a top 10 list of healthy desserts! I decided to give her Whole Wheat Very Very Blueberry Muffins a go. I made a slightly different glaze as I was out of vanilla protein powder.

My glaze: 1 cup vanilla greek yogurt, 1/2 cup stevia in the raw, 2 tsp vanilla extract. I refrigerated it while the muffins were baking and poured in on as soon as they came out of the oven.


They were sooooooo good! And healthy too 🙂
