Sunsets and Quinoa Salad

One of my favourite things about living in Port Melbourne is the epic sunsets. They’re absolutely stunning on a clear summer day and I get to see them regularly with the long days we have.

In winter they’re hard to catch and go by quickly. Usually I try to be down at the beach running when it’s sunset time (and usually my phone dies right after I snap the first photo!). But last night while I was making dinner I caught a little side view of a pretty one.

For dinner, I made an awesome quinoa salad. I didn’t realize I had quinoa stashed in the back of my cupboard! I cooked up the quinoa, roasted some carrots and mushrooms, and cut up some fresh spinach, red peppers, red onion and cucumbers. I threw it all together and tossed it with a little vinaigrette and some skinless chicken. Delish.

I think my cat Simba was keen on the salad too!
